Roasted Butternut Squash

A couple of weeks ago, Don had a hankering to try butternut squash. Some quick research online suggested roasting it in the oven. Some recipes showed the squash halved but most showed the squash cut into cubes and tossed with various yummy flavors.

We opted for cubes.

For this simple side dish, first preheat your oven to 400 degrees.

What you’ll need:

  • 4 teaspoons butter
  • 4 teaspoons brown sugar
  • Salt and pepper

Take your butternut squash and slice it up into neat little cubes. (I didn’t get pictures of the entire process. If you’d like some help with cutting up butternut squash for the first time, this recipe includes lots of photos, and gives you some other options for flavors.)

Melt your butter in the microwave and mix in the brown sugar, salt, and pepper.

Add the squash and toss together.

Lay out evenly on a baking try. I highly recommend lining the tray with parchment paper. We were so glad we did!

Roast – checking and turning the squash frequently – for 15-25 minutes. Time can vary depending on your oven and your desired tastes.

I was worried ours was a little overdone but it tasted GREAT!

We paired it with green beans and slow cooked pork ribs. Mmm…
