Thanks again to Juli Bauer at http://www.paleOMG.com for sharing this recipe on her site. I made it almost immediately after reading the post. Took no time at all. I must say, it is SO GOOD! We spread a little on our banana pancakes that morning. And I’ve had spoonfuls by itself as a treat after dinner too. 🙂
Here’s the skinny. You’ll need the following…
- 7 ounces of coconut flakes
- 1 cup pecans
- 2-3 tablespoons of some kind of oil, I used coconut oil
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 teaspoon salt
To make this easy treat, you’ll need a food processor. Put all the coconut flakes in the processor and let it run for 3-5 minutes.
Once the coconut flakes have reduced down to a creamy texture, add your pecans and let it run again until it’s all creamy and well mixed.
Then, while the processor is still running, slowly add your oil until the “butter” is the consistency you think you might like. I added a little at a time, tasted it, then added a little more.
Lastly, while the processor is running, add your final ingredients: the honey, vanilla, and salt. Pulse a bit longer to ensure it’s all well combined. Add a little more oil if you like. There’s no exact science to it.
Remove to a jar or tupperware and store in the refrigerator. It will harden so it helps to warm it in the microwave, just a tad, before using.
