Avocado Deviled Eggs with BACON

Don made these beauties for breakfast not long ago.

Not your traditional breakfast but we eat eggs and bacon for breakfast, so why not like this?

Avocado Deviled Eggs with Bacon

  • egg yolks
  • avocado
  • bacon
  • sour cream, just a little
  • salt

This is even easier to make if you already have hard boiled eggs on hand like we usually do.

Fry up some bacon, maybe 2 or 3 strips and chop into bits.

Cut and remove the yolk from your eggs. Mix the yolk and 1/2 or 1 whole avocado (depending on how many eggs you are making), add your bacon bits, and if you need a little more softening, just a bit of sour cream. Mix together well. Salt as desired. Then, if you want to get tricky, make your own piping bag. Put the mixture inside a plastic baggie, clip off the end, and pipe the mixture into your eggs. You can spoon it in of course as well.

Don garnished with paprika and green onions. He was in a creative mood that morning. 🙂

I don’t think I should have to say it, but they were out of this world delicious. You can’t go wrong with deviled eggs. And avocado and bacon? It just gets better and better. 🙂

(FYI – You will end up with more than you need to fill your eggs. We saved the extra to spread over an omelet the next day.)

A simple enough pleasure, surely, to have breakfast alone with one’s husband, but how seldom married people in the midst of life achieve it.
