Egg in a Basket – Eggplant basket that is…

Don experimented recently with the concept of eggs in a basket. Traditionally, eggs in a basket are made by cutting a hole in the center of a piece of bread and frying the egg inside the toast.

Don decided to reduce our eggplant primal pizza crust recipe to make a crust/toast that we could cook our egg inside.

Once we had the crust cooked, he placed it on the griddle and added the egg.

It was a little tricky. Our “toast” was not as thick as most bread so the egg wanted to spill over. We lifted it a bit to let the egg spread out underneath a little and that seemed to help.

All in all, it was not too time-consuming to make, about 15-20 minutes to make the toast and then less than 5 to finish with the eggs.

As for taste, it was…interesting. It wasn’t bad. But it wasn’t a home run either. It was nice to have something different, to find a way to add a vegetable to the breakfast plate, but it needs something if we were to ever do it again.

Breakfast is a notoriously difficult meal to serve with a flourish.
