Don saw this on a food show, The Victory Garden, a few weeks ago and got it in his head that he wanted to try it.
It is super easy to do and offers an alternative option for serving butternut squash. Which btw is delish, if you’ve never tried it. I am particularly fond of mashed squash, especially with bacon. Mmmm…
This is good too but it wow’d Don more than it did me. He thought it tasted a bit like toasted marshmallows. To each his own. 🙂
To prepare, simply peel your squash, cut in half and remove the seeds. Watch those fingers.
Slice in strips about a 1/4 inch thick. Drizzle or brush a little extra virgin olive oil on the squash, sprinkle with salt and pepper, and grill for about 2-3 minutes on each side. Enough to put some nice grill marks on your squash.
Prepare other yummy things to pair it with, like venison backstrap steaks wrapped in bacon and green beans sautéed with onions and bacon, dress up your plate for a quick snapshot, and consume heartily! 🙂
