Preserving Peppers

A friend with a pepper garden shared some of her excess with me recently. (Thanks Brenda!)

We pickled the jalapenos – they come out with a little sweet compliment to the fire of the pepper.

They are a great appetizer or party food and if you dip them in sour cream it cuts the fire a little for those who might be sensitive to the spice. Don likes to bring them when he meets up with a bunch of the guys for hunting each year. I’m pretty sure that big jar is on reserve for the trip in December.

We also had a handful of these long peppers which we decided to dry out.

We can use them in pickled veggie jars for a little added spice, or when we run out of red pepper flakes, we will make our own using the bullet.

Philosophers have often looked for the defining feature of humans — language, rationality, culture and so on. I’d stick with this: Man is the only animal that likes Tabasco sauce.
